Vegan Fried Chicken & Banana Waffles

Vegan Chicken Ingredients

- 3 cups all-purpose flour
- 4 tablespoons seasoned salt
- 4 tablespoons pepper
- 2 tablespoons garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 tablespoon adobo seasoning
- 2 teaspoons cayenne pepper
- 4-6 oyster mushrooms
- 1 cup cold water
- oil for frying
Vegan Banana Waffle Ingredients

- 1 cup banana flour
- 1 cup all purpose flour
- 3/4 cup oat milk
- 2 1’2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 3 tablespoons olive oil
- 3 tablespoons Just Egg (brand of egg substitute)
- 1 teaspoon vanilla
- banana puree (blend 1 banana and 1/4 cup oat milk)
- fresh raspberries for topping
Banana Compote

- 1 1/2 cups agave syrup
- 2 whole bananas diced
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
Directions

- Preheat fryer or pan to 325° degrees.
- In a large bowl combine banana flour, all purpose flour, baking powder, salt, and cinnamon with a whisk. { If you would like to make gluten waffles, double the amount of banana flour instead of using all purpose flour}
- Add oat milk, Just Egg substitute, olive oil and vanilla. Whisk to combine and set aside. (If waffle batter is too thick, feel free to add 1/4 cup more of oat milk)
- In another large bowl, mix seasoned salt, garlic powder, pepper, adobo, onion powder, cayenne pepper, paprika, and flour together.
- Separate mixture into 2 different shallow bowls. Divide 60/40 with one bowl having a little bit more mix than the other.
- Add cold water to the bowl that has less mix and whisk to combine, leaving the second flour mix bowl dry.
- Break oyster mushrooms apart into chicken size pieces (breast, leg, etc.)
- First, place mushroom into wet mixture making sure it is completely covered. Then transfer mushroom into the dry flour mixture making sure it is completely covered.
- Lightly shake off excess flour and place mushroom into fryer for 7-8 minutes or until golden flipping to the other side halfway through.
- Once the bubbles have subsided and your vegan chicken is cooked, remove from the oil and place on a paper towel-lined plate to remove any excess oil.
- Fill 3/4-1 cup of waffle mix and pour into waffle maker. Most waffle machines should have a green light to indicate when the waffle is done. If not, your waffle should be cooked in about 5 minutes.
- While waffles are cooking, chop 2 bananas into diced 1/2 inch pieces and place into a medium large sauté pan with agave, cinnamon, and vanilla extract.
- Simmer on medium high heat, for 3-4 minutes until bananas have slightly soften then set aside.
- To plate, begin by placing a fluffy waffle on your plate followed by the banana compote and top with fresh raspberries.
- Finish by placing a nice piece of fried vegan chicken on the side or on top of your waffle and enjoy!
